Why do reviews matter so much for a cafe?

Someone new to the neighborhood, or just passing through, searches for coffee and picks from the map in about ten seconds. They read a few recent reviews about the espresso, the pastries, and whether the staff is friendly. Your reviews are doing the selling before they reach the door.

When three cafes within a few blocks pour a similar cup, reviews usually break the tie. People look for recent reviews that name a drink, a pastry, or a barista who remembered them.
